There seems to be a wave of new tools coming out to host online courses. Here is one that looks pretty nice on the surface. It’s also pretty expensive, and needless to say, none of these tools are open source. Still - I find it interesting that this seems to be an emerging market (or at least people think it is). Worth keeping an eye on.
And noting one here that some in the community are considering at present - Fidelis.
